This flavorful butter is delicious. It gives simply baked, broiled or grilled meats just enough “oomph” for great subtle flavor. It’s also great on fresh corn!

1# Butter, softened
2 T Fresh Tarragon Leaves, chopped
1 T Fresh Parsley, chopped
2 T Scallion, chopped
3 Clove Garlic, chopped
1 C Sour Cream
Zest from 1 Lemon
2 T Lemon Juice
1 T Dijon Mustard

Combine all ingredients.
Mix well with a for or whip until blended.
Store in the fridge in a tightly sealed comtainer or tightly rolled like a log in plastic wrap for up to 2 weeks..

Herb Cream Cheese Sandwich

When I lived in Fairfield, CT. , I worked @ a tiny little restaurant called The Breakaway. On the menu was a vegetarian meal called the “Healthy” which consisted of this sandwich & a salad. When I make this, my husband teases me saying, “I see you’re eating your grass sandwich again.”

8 oz. Low Fat Cream Cheese, softened
1 lg. bunch Curly Parsley, tops only – no stems
Pinch Salt
2 sl. Whole Wheat Bread
4-5 Grape Tomatoes, halved
1/4 Avocado, sliced
Alfalfa Sprouts
Ranch Dressing (I prefer Hidden Valley Light)

In a food processor, zap cream cheese, parsley tops & salt.
Spread some of the herb cream cheese on both pieces of bread.
Top with tomato halves, avocado slices, sprouts & ranch dressing.
Store the herb cream cheese in the fridge for up to 2 weeks.

The original “Healthy” also had sliced mushrooms & cucumbers. 

NOTE: The Herb Cream Cheese is great on crackers or as a stuffing for cherry tomatoes!

When I introduced my best friend, Corey, to rack of lamb, it became weekly menu indulgence. This is the recipe she & I love.

2 T Dijon Mustard
1 sprig Rosemary, minced
Handful Flat Leaf Parsley, minced
3 cloves Garlic, chopped
Kosher Salt
Black Pepper
3 T Olive Oil
1 Rack of Lamb, Frenched & trimmed

Combine mustard, rosemary, parsley, garlic, salt, pepper & oil in a bowl.
Whisk together to combine.
Rub all over the meat.
Place on a baking sheet & let stand @ room temperature for 30 minutes.
Preheat oven to 400 degrees.
Bake for 25 minutes for a perfect rare (red warm center)**
Remove & tent with foil.
Allow to rest 10 minutes.
Slice & serve.

**NOTE: Increase the cooking time by 5 minutes for desired temperature (30 minutes for medium rare, 35 minutes for medium etc.)
