Blue Smoke Sliders

I developed these sliders for an appetizer contest. While I didn’t place, I didn’t have ONE leftover mini burger (out of the 96 I made).

½ c. Mayonnaise
¼ c. Ketchup
1 pkg. (24 ct.) Mini Potato Rolls
1½ T Blue Smoke Magic Dust Seasoning (recipe follows) 
Salt & Pepper, to taste
1½ lbs. 85% lean Ground Beef (can substitute turkey)
6 slices Pepper Jack Cheese, quartered

Combine mayonnaise & ketchup & set aside.
In a food processor, zap 3 of the potato rolls.
Place crumbs in a bowl and add magic dust, salt & pepper.
Crumble in ground beef & mix together with your hands.
Form into 21 mini uniform patties.
Heat a skillet over medium heat.
Cut rolls in half & place cut side down in pan.
Cook until golden brown.
Remove to a serving platter.
Spread the bottoms of the rolls with the mayonnaise mixture.
Cook patties covered for 2 minutes.
Turn, top with cheese, cover & cook 1 minute.
Remove from heat.
Place each patty on a roll, top & serve.

Blue Smoke Magic Dust

1/2 cup paprika
1/4 cup kosher salt, finely ground
1/4 cup sugar
2 tablespoons mustard powder
1/4 cup chile powder
1/4 cup ground cumin
2 tablespoons ground black pepper
1/4 cup granulated garlic
2 tablespoons cayenne

Mix all ingredients and store in a tightly covered container. You’ll want to keep some in a shaker next to the grill or stove. Keeps indefinitely but won’t last long.
