Spinach Ravioli with Creamy Marinara

1 (26 oz.) Pkg. Spinach Ravioli
2 T Extra Virgin Olive Oil
1½ oz. (one nip) Vodka
½ tsp fresh chopped garlic
1 (26 oz.) jar Marinara Sauce
1½ c. Cream
1 (14 oz.) can Artichoke Hearts, quartered
3 Firm Vine Ripe Tomatoes, diced fine
¼ c. Fresh Thyme Leaves
½ c. Freshly Grated Parmesan Cheese
Chopped Parsley for Garnish

Cook ravioli’s in rapidly boiling water to al dente (about 9 minutes). 
Meanwhile heat oil & vodka & add garlic.
Simmer 2 minutes.
Whisk in sauce and cream. 
Simmer until thickened, about 10 – 15 minutes. 
Add thyme, artichoke hearts & fresh tomatoes
Strain ravioli’s and add to sauce. 
Toss to mix & transfer to a serve platter.
Sprinkle with cheese & garnish with parsley.
Serve immediately.

Mesquite Smoked Artichokes with Tarragon Aioli

For the Artichokes: 4 Artichokes, with stem, trimmed & quartered 1 Lemon, quartered 1 T Black Peppercorns 4 cloves Garlic, crushed Steam artichokes with the lemon, peppercorns & garlic in the water for 20 minutes. For the Artichokes:
4 Artichokes, with stem, trimmed & quartered
1 Lemon, quartered
1 T Black Peppercorns
4 cloves Garlic, crushed

Steam artichokes with the lemon, peppercorns & garlic in the water for 20 minutes.
When artichokes are done, remove the purple hairy “choke”.
Place in a stove top smoker prepared with mesquite chips.
Smoke for 10 minutes.
Serve warm or room temperature with tarragon aioli.

For the Aioli:
1/2 Cup Hellmann’s Mayonnaise – No Substitutes
1 pkg. (2/3 oz.) Fresh Tarragon, chopped
1 tsp Dried Tarragon
2 Dash White Pepper
1 tsp Lemon Juice

Combine mayonnaise, fresh & dried tarragon, pepper and lemon juice.
Let stand to combine flavors.

NOTE: Not everyone has a stove top smoker. When steaming the artichokes, add
1 tsp mesquite liquid smoke to the water. It’s not exactly the same, but an
acceptable substitute.
