Baked Onions with Gruyere Cheese

Gruyere cheese is one of the true forms of what we know as “Swiss cheese”; which is mass produced to make it affordable to the general public. Gruyere is usually aged 10-12 months & uses cows milk with more fat which natually gives it a rich nutty & buttery flavor.

5 medium Sweet Onions
2 tsp EVOO
Salt & Pepper
1 c. Low Sodium Beef Stock
2 tsp. Low Sodium Soy Sauce**
1 c. (about 4 oz.) finely shredded Gruyere Cheese
2 tsp fresh chopped Sage

Preheat oven to 400°.
Coat a large baking dish with cooking spray.
Cut ¼” of the top & bottom of the onions.
Cut onions in half crosswise & peel off the skins.
Place in prepared dish.
Brush exposed onion tops with EVOO & season with salt & pepper.
Bake for 35 minutes.
Combine beef stock & soy.
Remove onions from oven & pour stock over them.
Bake an additional hour basting every 20 minutes.
Remove dish from oven & sprinkle onions with cheese & sage.
Bake another 5-7 minutes or until cheese is melted & bubbly.

**If using regular beef stock omit the soy sauce.
