Saw this made on food networks Down Home with the Neeley’s. They like spicy foods so I just omitted a few ingredients.

For the Veggies:
1 Zucchini, sliced
2 Red Peppers, quartered
1 Red Onion, sliced
1 pt. Cherry Tomatoes
EVOO
Salt & Pepper

Drizzle veggies with EVOO & season with salt & pepper.
Stir to coat.
Grill to tender crisp (can also roast in a 400° oven for 30 minutes).

For the spread & to assemble:
2 cloves Garlic, pressed
Zest of ½ a Lemon
Juice from ½ a Lemon
¾ c. Mayonnaise
Salt & Pepper to taste.
1 loaf Italian Bread, cut in half lengthwise
8 slices Mozzarella Cheese
6 Fresh Basil Leaves

Combine 1st five ingredients & set aside.
Grill bread until lightly browned.
Spread mayonnaise mixture on both sides of bread.
Build your hero with the veggies.
Top with the cheese & basil leaves.
Cut as desired & serve.

Make Your Produce Last Longer

With prices climbing out of
control these days, you want
to get the most from your
grocery purchases. Produce
especially doesn’t last as long
as it should.

Try these tips & you may be surprised….

–  Store celery in aluminum foil. I don’t know why, but it lasts up to a month when stored this way.

– For iceberg lettuce, simply remove the core & wrap tightly in plastic wrap. Believe it or not, it will last 3x as long if stored this way.

 – Store all other produce in “Ziploc Fresh Produce Bags” (the green box).  It is this cooks experience, that your produce will last much longer using this brand versus others.

 – Once peppers, zucchini, cucumbers & squash are cut, store in foil. This helps prevent them from getting “slimy.”

 – Onions & potatoes  should be stored @ room temperature in a dark, cool place for best longevity. However, shallots, if not going to be used right away, should be refrigerated.

While visiting my friends in sunny Florida, we went on a luncheon cruise on the Saint Johns river.  For the appetizers they served fresh veggies with this dip on the side (along with cheese & crackers). I asked for the recipe & the chef was kind enough to share. So, I’m sharing with you!

1 Red Bell Pepper, roasted (jared in water is fine)
1/2 c. Good Mayonnaise
2 T Dry Ranch Dressing (I used Hidded Valley)
Fresh Veggies

Combine all in a food proccessor.
Pulse until well blended.
Serve with fresh veggies such as broccoli, cauliflower & carrots
