Someone recently asked me how to get the glassy look, like you get in a restaurant, on a tenderloin steak. The answer – Heat a skillet & add butter & olive oil to the pan. Season your 1 inch thick steak with salt & pepper. When the butter is melted. place the steak in the center of the pan. DO NOT MESS with IT. Allow to sear for 2-3 minutes. Begin to swirl the pan after the 2 minute mark. When the steak releases, keep swirling the pan for another 3 minutes. Do not use a utensil until your ready top turn it. Flip the steak & sear again for 2-3 minutes swirling the pan at the 2 minute mark. Again, when it releases keep swirling for about 2 minutes. Let the steak rest for 5 minutes before serving. Both sides should have a “glassy” look to them.
