This flavorful salad will brighten up any summertime meal.

2 bunches Asparagus, blanched 1-2 minutes
½ tsp Garlic Powder
½ tsp Tarragon
Salt & Pepper
½ c. Italian Vinnaigrette (see Italian Vinnaigrette on this site)
¼ c. Tarragon Vinegar
Mixed Lettuces
1 c. Mayonnaise
Marinate from Asparagus
Parsley sprigs for garnish

Place blanched asparagus in a glass dish.
In a bowl or measuring cup, combine garlic powder, tarragon, salt & pepper, vinnaigrette & tarragon vinegar.
Pour over asparagus..
Cover & chill 1 hour.
Place lettuces on an oblong serving platter.
Arrange asparagus tip sides out on both ends of the platter.
Whisk together mayonnaise & some of the marinate (enough to make a sauce).
Spoon sauce in the center of the platter between the 2 bunches of asparagus.
Garnish with parsley sprigs.
Serve immediately.

This is a very simple way to prepare asparagus that is fool proof.

1 bunch Asparagus, ends trimmed
Salt & Pepper
Good Olive Oil, optional

Dampen 3 paper towels & squeeze out the excess water.
Divide the asparagus between the towels and season with salt & pepper.
Roll the paper towels around the asparagus & fold in the ends.
Microwave on high for 5 minutes.
Remove from towels & drizzle with olive oil if desired.

This delicious side dish & sauce pairs beautifully with “Citrus Chicken.”   Give it a try & let me know what you think!

2 T Unsalted Butter
3 T Flour
2 T White Wine
1 (6 oz.) can Mandarin Oranges, drained with juice reserved
¼ c. Pineapple Juice
½ – ¾ c. Fat Free Half & Half (use more if necessary)
Salt & Pepper
2 lbs. Asparagus, trimmed **

Melt butter & whisk in flour.
Whisk in orange & pineapple juices and wine (sauce will be very thick).
Whisk in enough milk to make smooth.
Season with salt & pepper.
Crush ½ the oranges into a bowl saving the juices.
Add to the sauce & stir.
Set aside & keep warm.
Blanch the asparagus in boiling water for 3-5 minutes
   – depending on how thick the spears – you want them tender crisp.
Place asparagus on a serving patter & top with sauce.
Top with remaining ½ can of orange segments & serve.

** To easily trim the asparagus, simply bend one spear until it breaks. As long as they all are close in diameter, that is where you should cut them.
